About this Position  

As a Fish Filleter, you will play an important role in ensuring premium seafood products are prepared to the highest quality standards. Working within our seafood processing team, you will be responsible for accurately filleting a variety of fish species while maintaining food safety and quality requirements.

This is a hands-on role suited to someone who takes pride in their workmanship, enjoys working efficiently, and has a strong eye for detail.

 

Key Responsibilities

  • Fillet and process a variety of fish species to customer specifications and company standards 
  • Achieve consistent yield returns while maintaining product quality
  • Ensure seafood products are correctly iced, labelled and stored
  • Monitor fish quality and identify any changes that may impact product condition or yield
  • Maintain high standards of food safety, hygiene and housekeeping
  • Follow company procedures relating to OH&S, HACCP and cold chain management
  • Work collaboratively to meet daily production targets and customer requirements

  • Demonstrating strong seafood handling and processing skills
  • Maintaining excellent food safety and compliance standards
  • Contributing positively to team productivity and workplace culture
  • Supporting the delivery of high-quality products to customers on time

 

What We’re Looking For

To thrive in this role, you will bring:

  • Previous experience filleting and processing a variety of fish species
  • Strong knowledge of seafood products and handling requirements
  • Understanding of HACCP, food safety and cold chain processes
  • Excellent hand-eye coordination and processing accuracy
  • High attention to detail and quality standards
  • Ability to work efficiently in a fast-paced production environment
  • Strong commitment to workplace safety and teamwork
